Granny's Proud to be Ginger Rhubarb Crumble

Ingredients

  • 500g Rhubarb
  • 50g soft brown sugar
  • 4 pieces stem ginger in syrup cut into smallish chunks
  • 300g Proud to be Ginger Nuts
  • 100g melted butter

Recipe

Cut rhubarb into chunks, then place in saucepan with sugar and ginger and cook gently until tender but not mushy. Transfer to a shallow serving dish and allow it to cool.

Meanwhile, whiz the Proud to be Ginger Nuts in a food processor and when they are crumb-like, add the melted butter and mix to combine. When the rhubarb is cool, sprinkle the biscuit mix over the top.

Serve with thick cream & Enjoy!
