Popeye Open Tart
This is a firm favourite in our house and so simple to do. It's fast, simple & effective. The Harissa gives it a little zing and a great taste dimension! Try replacing the chicken with prawns or flaked salmon!
- One packet of pre made puff pastry
- 6 small tomatoes
- Handful of spinach
- Cooked chicken breast (any cooked meat will do or for the Veggie version leave it out)
- 1 Tbl Spoon or Mr. Vikkis Lemon Harissa
- A handful of grated cheese
- Seasoning
- 1 egg
- A drop of milk
- Roll out the pastry on a floured surface
- Mark out approx a 1 inch border with the tip of a knife all the way round the pastry. Make sure you don't cut all the way through!
- Spread a thin layer of the harissa paste onto the inner section of the pastry as you would a pizza base.
- Cut the tomatoes in half and evenly scatter on the base
- Now give the base a dusting with the grated cheese
- Place the meat and the spinach on the base now, no method to this just make sure everyone gets enough!
- Add salt and pepper (do this from a height so it makes you look like you know what you're doing)
- Beat the egg in a cup with a drop of milk
- Use the egg mixture to glaze the edge of the pasty
- Sling in the oven at the pasty makers recommended temperature for the recommended time.
- Portion up and serve with a nice side salad or coleslaw.
- Don't forget the wine!
